This easy lemon garlic baked chicken breast recipe is simple, juicy, and full of bright citrus flavor. Perfect for busy weeknights, it uses basic ingredients and comes together in about 35 minutes.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 large lemons
  • 6 to 8 cloves garlic, smashed
  • 3 tablespoons olive oil, plus more for the dish
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt, plus more for seasoning
  • ½ teaspoon freshly ground black pepper
  • ¼ cup chicken broth or dry white wine
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels. If very thick (more than 1 inch), gently pound to an even thickness.
  3. In a small bowl, combine 1 teaspoon salt, ½ teaspoon black pepper, and 1 teaspoon dried oregano. Sprinkle evenly over both sides of the chicken.
  4. Zest one lemon into a small bowl (about 1 tablespoon zest). Juice that same lemon (about 3 tablespoons juice). Add 3 tablespoons olive oil and whisk together. Pour over the seasoned chicken and turn to coat. Let sit at room temperature for 15 minutes.
  5. Drizzle a little olive oil in the bottom of a 9×13-inch baking dish. Slice the second lemon into thin rounds (about ¼-inch thick) and arrange in a single layer in the dish. Scatter the smashed garlic cloves over and around the lemon slices. Pour in ¼ cup chicken broth or wine.
  6. Place the marinated chicken breasts on top of the lemon slices and garlic, leaving space between each piece.
  7. Bake for 22 to 28 minutes, until the internal temperature reaches 165°F (74°C) at the thickest part.
  8. Remove from oven. Transfer chicken to a cutting board or platter, tent loosely with aluminum foil, and let rest for 5 to 7 minutes.
  9. Optional: While chicken rests, place the baking dish on the stovetop over medium heat. Add a splash more broth or wine and scrape up browned bits. Simmer for 2 to 3 minutes until slightly reduced. Swirl in 1 tablespoon cold butter if desired.
  10. Serve chicken on a platter, spoon pan sauce over the top, and garnish with fresh parsley if using.

Notes

Use an instant-read thermometer for perfectly cooked chicken. Let the chicken rest after baking to keep it juicy. The pan juices are liquid gold—don’t discard them.
