These easy meal-prep breakfast burritos are quick, simple, and perfect for busy school mornings. They combine eggs, cheese, veggies, and optional sausage wrapped in soft tortillas for a filling and delicious start to the day.

  • 1/4 cup (60 ml) milk (whole milk preferred)
  • 1 cup (100 g) shredded cheddar cheese
  • 6 oz (170 g) cooked breakfast sausage or bacon (optional)
  • 1 cup diced bell peppers
  • 1 medium onion, finely chopped
  • 1/2 cup (120 g) black beans, drained and rinsed
  • 8 large flour tortillas (10-inch / 25 cm)
  • 1/2 cup (120 g) salsa (fresh or store-bought)
  • Salt and pepper to taste
  • 1 tbsp (15 ml) olive oil or butter

Instructions

  1. Prep the ingredients (10 minutes): Dice the bell peppers and onion, cook the sausage or bacon if using, and drain and rinse the black beans. Set aside.
  2. Cook the vegetables (5 minutes): Heat olive oil or butter in a skillet over medium heat. Add onions and bell peppers and cook until softened and fragrant, about 4-5 minutes, stirring occasionally.
  3. Whisk the eggs (2 minutes): In a mixing bowl, beat together eggs, milk, salt, and pepper until well mixed but not frothy.
  4. Cook the eggs (5-7 minutes): Reduce heat to medium-low and pour egg mixture into the skillet with veggies. Stir gently and continuously, folding eggs slowly until mostly set but still moist.
  5. Add the fillings (2 minutes): Stir in cooked sausage or bacon and black beans until evenly combined. Remove from heat.
  6. Assemble the burritos (10 minutes): Warm tortillas slightly to make pliable. Place a scoop of egg mixture down the center of each tortilla, sprinkle with cheese, and add a spoonful of salsa.
  7. Wrap and store (5 minutes): Fold in sides and roll tightly from bottom up. Wrap each burrito in foil or parchment paper. Store in fridge up to 5 days or freeze for longer storage.

Notes

Cook eggs low and slow to keep creamy and avoid rubbery texture. Warm tortillas before assembling to prevent tearing. Wrap burritos tightly for storage. Reheat wrapped in a damp paper towel or foil to keep tortillas soft.
