These no-bake cheesecake bars feature a buttery graham cracker crust, a fluffy cream cheese filling, and vibrant red and blue berry toppings, perfect for summer celebrations.

  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened (full-fat)
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1 cup fresh raspberries or strawberries, chopped
  • 2 tablespoons granulated sugar (for red berry topping)
  • 1 teaspoon lemon juice
  • 1 cup fresh blueberries
  • 1 tablespoon granulated sugar (for blue berry topping)
  • ½ teaspoon lemon zest

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbs are evenly coated and hold together when pressed. Press firmly into the bottom of a 9×9 inch pan. Chill in the refrigerator for about 10 minutes.
  2. Make the cheesecake filling: Beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy (3-4 minutes). In a separate chilled bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture in two additions until light and fluffy.
  3. Spread the filling evenly over the chilled crust. Smooth the top and return to the fridge to set for at least 15 minutes.
  4. Prepare the red berry topping: Combine chopped raspberries or strawberries with sugar and lemon juice. Let sit for 5-10 minutes to macerate.
  5. Prepare the blue berry topping: Mix blueberries with sugar and lemon zest. Let sit briefly to release juices.
  6. Assemble the layers: Spoon the red berry mixture over one half of the cheesecake layer and the blueberry mixture over the other half. Optionally swirl gently with a toothpick for a blended look but keep colors mostly separated.
  7. Chill the assembled bars in the refrigerator for at least 3 hours or preferably overnight to firm up and meld flavors.
  8. Serve chilled. Use a sharp knife warmed in hot water and wiped dry for clean cuts. Store leftovers in an airtight container in the fridge for up to 4 days.

Notes

Use softened cream cheese for smooth filling. Whip heavy cream to stiff peaks and fold gently to keep filling airy. Chill bars at least 3 hours or overnight for best texture. Warm knife between cuts for clean slices. Fresh berries preferred; thaw and drain frozen berries if used. Can substitute almond flour for gluten-free crust and coconut whipped cream for dairy-free version.
