  • ½ cup (130g) creamy peanut butter
  • ¼ cup (85g) honey
  • ⅓ cup (60g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt. Stir to distribute evenly.
  2. Add the creamy peanut butter, honey, and vanilla extract to the bowl.
  3. Mix with a spatula until the mixture starts clumping together. If too dry, add a teaspoon of warm water or a bit more honey. If too wet, add a tablespoon more oats.
  4. Fold in the mini chocolate chips gently.
  5. Chill the mixture in the refrigerator for 15-20 minutes (optional but recommended for easier handling).
  6. Line a baking sheet or plate with parchment paper. Roll the mixture into 1-inch balls (about 16-18 bites).
  7. Place the rolled bites on the parchment-lined sheet and refrigerate for at least 30 minutes to set.

Notes

For best texture, use creamy peanut butter (not too runny). Chill the mixture before rolling to reduce stickiness. Wet hands slightly with cold water if mixture sticks to hands. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
