  • 1 cup (250g) natural peanut butter (creamy or chunky)
  • ⅓ cup (113g) honey
  • 1 tsp (5 ml) vanilla extract
  • ½ tsp (1g) cinnamon
  • 2 tbsp (20g) chia seeds (optional)
  • ¼ cup (45g) mini chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Measure out all ingredients: rolled oats, peanut butter, honey, vanilla extract, cinnamon, chia seeds (if using), salt, and mini chocolate chips.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and well blended.
  3. Add oats, cinnamon, chia seeds, salt, and chocolate chips to the wet mixture. Fold together until oats are coated and mixture forms a thick, sticky dough. Adjust texture with a drizzle of honey or teaspoon of water if too dry, or add more oats if too wet.
  4. Form the mixture into 1-inch (2.5 cm) balls using hands or a mini scoop, pressing firmly but keeping them soft.
  5. Place the bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to set.
  6. Store chilled bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.

If mixture sticks to hands, wet palms lightly before rolling. Chilling is essential to firm up bites and prevent crumbling. Adjust wet-to-dry ratio carefully to avoid gummy or dry texture.
