  • 1 cup (240 ml) water
  • 1/2 cup (115 g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves (optional)
  • 1/2 teaspoon baking powder
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (60 g) unsalted butter, softened
  • 1 cup (120 g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • A pinch of ground ginger or nutmeg (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Lightly grease your 9×13-inch baking dish with butter or nonstick spray.
  2. Combine the pumpkin and eggs in the mixing bowl. Whisk until smooth and uniform in color.
  3. Add the water and melted butter. Stir gently to combine.
  4. Gradually sprinkle in the dry cake mix, cinnamon, nutmeg, cloves, and baking powder. Fold gently until just combined.
  5. Pour the batter into your prepared baking dish and smooth the top evenly.
  6. Bake for 45-50 minutes until golden on top and a toothpick inserted in the center comes out with a few moist crumbs.
  7. While the cake bakes, prepare the spiced cream cheese frosting by beating together softened cream cheese and butter until smooth and fluffy.
  8. Add powdered sugar, vanilla, cinnamon, and a pinch of nutmeg or ginger. Beat until creamy and spreadable.
  9. Once the cake is cool to the touch but still slightly warm, spread the frosting generously over the top.
  10. Serve immediately or chill for 30 minutes for a firmer frosting.

Notes

Do not overmix the batter after adding the dry cake mix to avoid toughness. Melt butter to warm but not hot to prevent cooking the eggs. Use room temperature eggs for smooth batter. Check cake at 40 minutes if oven runs hot. Chill cream cheese and butter before frosting for best texture. If frosting is too thick, add a splash of milk or cream; if too thin, add more powdered sugar.
