A smoky, tangy, and slightly spicy salsa verde made with roasted Hatch chilies and tomatillos, perfect for freezer meal prep and bursting with flavor.

  • 6 medium Hatch chilies (fresh or frozen)
  • 810 medium tomatillos, husked and rinsed
  • 1 medium white onion, peeled and quartered
  • 45 garlic cloves, peeled
  • Small bunch fresh cilantro, roughly chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon salt (to taste)
  • A few tablespoons water (as needed)

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Husk and rinse the tomatillos thoroughly. Quarter the onion and peel the garlic cloves. If you prefer less heat, slice the Hatch chilies lengthwise and remove the seeds; otherwise, leave them whole.
  3. Arrange the Hatch chilies, tomatillos, onion quarters, and garlic cloves on a baking sheet in a single layer. Drizzle lightly with olive oil and toss gently to coat.
  4. Roast for 20-25 minutes, flipping halfway through, until the skins are blistered and slightly charred and the onions and garlic are softened.
  5. Remove from the oven and let cool for about 5 minutes.
  6. Transfer the roasted vegetables to a blender or food processor. Add fresh cilantro, lime juice, salt, and 2 tablespoons olive oil. Blend until smooth, adding water a tablespoon at a time to reach desired consistency (thick but pourable).
  7. Taste and adjust seasoning with more salt or lime juice if needed. Add a pinch of sugar if the salsa is too spicy.
  8. Cool completely before portioning into freezer-safe containers or bags. Label and freeze for up to 3 months.

Notes

For milder salsa, remove seeds from Hatch chilies before roasting. For extra smoky flavor, char chilies briefly on a gas stove flame before roasting. Let roasted ingredients cool before blending to protect blender motor and avoid bitterness. Store in small portions for easy thawing. Salsa flavor deepens after a day or two in the fridge.
