  • 1 cup buffalo wing sauce
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 3 cups shredded green cabbage
  • 1/2 cup shredded carrots (optional)
  • 1/3 cup crumbled blue cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Freshly ground black pepper to taste
  • 12 slider buns or mini brioche rolls
  • Optional: extra buffalo sauce for drizzling
  • Butter for toasting buns

Instructions

  1. Pat the chicken dry with paper towels, then season both sides with salt, pepper, garlic powder, and onion powder.
  2. Place the chicken breasts or thighs in the slow cooker. Pour the buffalo wing sauce and chicken broth evenly over the chicken. Do not stir.
  3. Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours until the chicken is tender enough to shred.
  4. Use two forks or shredding claws to pull the chicken apart in the slow cooker. Stir the shredded chicken into the sauce.
  5. In a large bowl, combine shredded cabbage, carrots, and blue cheese. In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, and black pepper. Pour dressing over veggies and toss well.
  6. Lightly butter the slider buns and toast them in a skillet over medium heat until golden brown and slightly crisp.
  7. Assemble the sliders by spooning shredded buffalo chicken onto the bottom bun, adding a heaping spoonful of blue cheese slaw, drizzling extra buffalo sauce if desired, then topping with the bun. Serve immediately.

Notes

Choose chicken thighs for juicier results. Do not over-stir or lift the slow cooker lid frequently. Make the slaw fresh before serving to avoid sogginess. Toast buns well to prevent sogginess. Leftover sliders can be refrigerated and reheated wrapped in foil. For gluten-free, use gluten-free buns or lettuce wraps.
