Easy Slow Cooker Ground Turkey and Sweet Potato Skillet

A comforting, set-it-and-forget-it slow cooker meal with ground turkey, sweet potatoes, and black beans in a smoky, savory sauce. Perfect for busy weeknights and meal prep.

  • 1 pound ground turkey (93/7 lean)
  • 2 medium sweet potatoes, peeled and diced into ½-inch cubes (about 4 cups)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • Optional garnishes: fresh cilantro, sliced avocado, lime wedges, Greek yogurt or sour cream

Instructions

  1. Brown the ground turkey: Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (about 5-7 minutes). Drain excess fat if needed.
  2. Prep the veggies: While the turkey browns, peel and dice sweet potatoes into ½-inch cubes. Dice the onion and mince the garlic.
  3. Layer in slow cooker: Place diced sweet potatoes in the bottom of a 4-6 quart slow cooker. Add black beans, onion, and garlic. Top with browned turkey.
  4. Add liquids and seasonings: Pour in diced tomatoes (with juices) and chicken broth. Add tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Stir until well combined.
  5. Cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until sweet potatoes are tender.
  6. Finish and serve: Stir gently. Taste and adjust seasoning. Serve hot with desired garnishes.

Notes

For best results, brown the turkey first and cut sweet potatoes into uniform cubes. If mixture is too watery, cook uncovered on HIGH for 15-20 minutes. Leftovers taste even better the next day. Can be made vegetarian by swapping turkey for additional beans or lentils.
