Easy Slow Cooker Turkey Chili for Family Dinner

This easy slow cooker turkey chili is thick, hearty, and packed with flavor from a method that breaks every rule. It’s the perfect hands-off dinner for busy weeknights, and leftovers taste even better the next day.

  • 1.5 pounds (680 grams) ground turkey (93% lean)
  • Two 14.5-ounce (411 grams each) cans diced tomatoes (fire-roasted preferred), undrained
  • One 15-ounce (425 grams) can kidney beans, drained and rinsed
  • One 15-ounce (425 grams) can black beans, drained and rinsed
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 medium bell pepper (any color), diced
  • 3 cloves garlic, minced
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (plus more to taste)
  • ยฝ teaspoon black pepper
  • 1 cup (240 milliliters) low-sodium chicken broth
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, sliced green onions, fresh cilantro, diced avocado, tortilla chips, lime juice

Instructions

  1. Prep your vegetables: Dice the onion and bell pepper into roughly ยฝ-inch pieces. Mince the garlic cloves.
  2. Open your cans: Drain and rinse the kidney beans and black beans. Do not drain the diced tomatoes.
  3. Add the ground turkey to the slow cooker and break it up with a wooden spoon into large chunks.
  4. Scatter the diced onion, bell pepper, and minced garlic over the turkey. Do not stir yet.
  5. Pour in the diced tomatoes (with their juice), drained kidney beans, and drained black beans. Do not stir yet.
  6. Sprinkle the chili powder, cumin, smoked paprika, oregano, salt, and black pepper evenly over the top.
  7. Pour the chicken broth around the edges of the slow cooker.
  8. Stir everything together thoroughly, scraping the bottom and corners.
  9. Cover with the lid and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  10. Check for doneness: The chili is ready when the turkey is cooked through and tender. Adjust salt and spices if needed.
  11. If desired, thicken by removing the lid and cooking on HIGH for 20 to 30 minutes, or mash some beans against the side of the slow cooker.
  12. Serve hot with desired toppings.

Notes

This chili is forgiving and can cook an extra hour without issue. For thicker chili, mash some beans before serving. Toasting the spices in a dry skillet for 30-60 seconds before adding them deepens the flavor. Resist the urge to lift the lid during cooking to maintain heat and steam.
