  • 1 cup (240 ml) pumpkin purée (canned or homemade, not pumpkin pie filling)
  • 1 cup (240 ml) water
  • ½ cup (100 g) erythritol or preferred natural sweetener (monk fruit sweetener recommended)
  • 1 teaspoon ground cinnamon (preferably Ceylon cinnamon)
  • ½ teaspoon ground nutmeg (freshly grated preferred)
  • ⅛ teaspoon ground cloves or allspice
  • ½ teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. In a small saucepan, whisk together pumpkin purée, water, erythritol (or preferred sweetener), cinnamon, nutmeg, cloves, vanilla extract, and salt to prevent clumps.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, whisking frequently, about 5 minutes.
  3. Reduce heat to low and simmer uncovered for 10–12 minutes, stirring occasionally to prevent sticking and skimming off any foam.
  4. Check consistency: syrup should coat the back of a spoon lightly but still pour easily. If too thick, whisk in a splash of water; if too thin, simmer a few more minutes. It will thicken more as it cools.
  5. Optional: Pour syrup through a fine mesh sieve into a heatproof bowl or jar for a smooth finish, pressing gently to extract all liquid.
  6. Let syrup cool to room temperature, then transfer to a clean jar or bottle. Seal tightly and refrigerate. Use within two weeks.

Notes

Stir syrup before each use as pumpkin solids may settle. For smoother syrup, blend mixture with an immersion blender before simmering. Avoid boiling to preserve delicate spices. Store refrigerated and use within two weeks. Adjust sweetness to taste after cooling. For thicker syrup, simmer longer or add xanthan gum.
