  • 4 ounces cream cheese, softened
  • 6 slices deli turkey breast
  • 4 slices cheddar cheese
  • Optional: thinly sliced cucumber, bell pepper strips, fresh spinach, or avocado

Instructions

  1. Prepare the tortillas: Lay one large flour tortilla flat on your cutting board. If cold, let sit at room temperature for about 5 minutes.
  2. Spread the cream cheese: Using an offset spatula or butter knife, spread a thin, even layer of softened cream cheese over the entire surface of the tortilla, leaving about a half-inch border around the edges.
  3. Layer the turkey: Place 2 to 3 slices of deli turkey flat over the cream cheese, overlapping slightly so the whole tortilla is covered.
  4. Add the cheese: Lay 1 to 2 slices of cheddar cheese on top of the turkey, tearing into smaller pieces to cover evenly.
  5. Add optional fillings: If using, lay cucumber, bell pepper strips, or other fillings in a single line along one edge of the tortilla.
  6. Roll it up tightly: Starting from the edge closest to you, roll the tortilla away from you into a tight log, keeping the filling tucked in.
  7. Wrap and chill: Place the rolled tortilla seam-side down on plastic wrap, wrap tightly, and refrigerate for at least 15-20 minutes (or overnight).
  8. Slice into pinwheels: Once firm, unwrap and slice into 1-inch thick rounds using a sharp knife with a gentle sawing motion. You should get about 6 to 8 pinwheels per tortilla.
  9. Pack the bento box: Arrange pinwheels in a single layer in a bento box, filling remaining compartments with fruit, veggies, and a small treat.

Notes

The cream cheese layer acts as a barrier to prevent sogginess. Chilling the roll-ups before slicing is crucial for clean cuts. For best results, use room-temperature cream cheese and a serrated knife. Store uncut rolls in the refrigerator for up to 3 days; sliced pinwheels are best within 24 hours.
