Flavorful Southern Heirloom Tomato Pie Recipe Easy Homemade with Sharp Cheddar

  • 1 ยฝ cups (190g) all-purpose flour
  • 10 tablespoons (140g) unsalted butter, cold and cubed
  • 34 tablespoons (45-60ml) ice water
  • Pinch of salt
  • 45 medium heirloom tomatoes (about 2 lbs / 900g), sliced thick
  • 1 ยฝ cups (150g) sharp cheddar cheese, shredded
  • ยฝ cup (120ml) mayonnaise
  • ยผ cup fresh basil leaves, chopped
  • 1 tablespoon (15ml) Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, whisk together flour and a pinch of salt. Add cold, cubed butter and cut into flour using a pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized pieces.
  2. Drizzle in ice water, stirring gently with a fork until dough just comes together. Do not overwork.
  3. Form dough into a disk, wrap in plastic wrap, and refrigerate for 20-30 minutes.
  4. Slice heirloom tomatoes about ยผ-inch thick. Lay slices on paper towels or a cooling rack, sprinkle lightly with salt, and let sweat for 15-20 minutes to draw out moisture.
  5. Lightly flour work surface and roll out dough into a 12-inch circle. Transfer to a 9-inch pie dish, press gently, trim and crimp edges, and poke holes in the bottom with a fork.
  6. In a bowl, combine shredded sharp cheddar, mayonnaise, Dijon mustard, minced garlic, and chopped basil. Season with pepper.
  7. Spread half of the cheese mixture evenly over the crust. Layer half of the tomato slices on top, then repeat with remaining cheese mixture and tomatoes. Finish with extra cheddar sprinkled on top.
  8. Preheat oven to 375ยฐF (190ยฐC). Bake pie on middle rack for 40-45 minutes until crust is golden and cheese is bubbly. Cover crust edges with foil if browning too quickly.
  9. Let pie cool on a rack for at least 15 minutes before slicing and serving.

Notes

Salt the tomato slices ahead of time to draw out excess moisture and prevent soggy crust. Use cold butter for a flaky crust. Watch baking time and tent crust edges with foil if browning too fast. Let pie rest 15 minutes before slicing. Optional blind bake crust for 10 minutes if desired.
