  • 8 ounces (225 grams) feta cheese, preferably full-fat
  • 4 ounces (115 grams) cream cheese, softened
  • 2 tablespoons (30 ml) plain full-fat Greek yogurt
  • 1 small clove garlic, minced
  • 1 tablespoon (15 ml) fresh lemon juice
  • 2 tablespoons (30 ml) extra virgin olive oil, plus more for drizzling
  • 1 pint (about 300 grams) cherry tomatoes
  • 2 tablespoons (30 ml) hot honey (or regular honey mixed with a pinch of cayenne or chili flakes)
  • Fresh herbs (thyme or oregano), optional
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tablespoon olive oil and a pinch of salt on a baking sheet. Spread evenly and roast for 20-25 minutes until soft and caramelized.
  2. While tomatoes roast, combine feta cheese, softened cream cheese, Greek yogurt, minced garlic, lemon juice, and 2 tablespoons olive oil in a food processor. Pulse until smooth, creamy, and whipped (about 1-2 minutes). Add a teaspoon of water or more yogurt if too thick.
  3. Check texture to ensure dip is light and fluffy with no large chunks. Pulse longer if needed but avoid over-blending.
  4. Transfer whipped feta dip to a serving bowl. Spoon warm roasted cherry tomatoes over the top.
  5. Drizzle with hot honey (about 2 tablespoons or to taste). Sprinkle fresh herbs and freshly cracked black pepper if desired.
  6. Serve immediately with warm pita bread, baguette slices, or fresh veggies.

Notes

Use block feta rather than crumbled for better texture. Soften cream cheese to avoid lumps. Roast tomatoes to enhance sweetness and flavor. If hot honey is unavailable, mix regular honey with cayenne or chili flakes. Store dip and tomatoes separately in airtight containers for up to 3 days. Bring dip to room temperature before serving.
