A quick, easy, and healthy lunch featuring fresh mozzarella, cherry tomatoes, and basil on skewers, drizzled with balsamic glaze and packed neatly in a bento box. Perfect for on-the-go meals that are light yet satisfying.

Ingredients

  • Fresh mozzarella balls (bocconcini or ciliegine), drained
  • Cherry or grape tomatoes, washed and dried
  • Fresh basil leaves, whole
  • Balsamic glaze or reduced balsamic vinegar
  • Extra virgin olive oil (optional)
  • Salt (preferably flaky sea salt)
  • Freshly cracked black pepper
  • Wooden or reusable bamboo skewers (4–6 inches long)

Instructions

  1. Drain the mozzarella balls using a fine mesh strainer for about 5 minutes to remove excess liquid.
  2. Wash and dry the cherry tomatoes thoroughly to prevent sogginess.
  3. Pick fresh, bright green basil leaves, tearing large leaves in half to keep bite-sized.
  4. Assemble the skewers by threading one mozzarella ball, followed by a basil leaf, then a cherry tomato. Repeat if skewer length allows.
  5. Arrange the skewers neatly in a bento box compartment, leaving room for drizzling glaze later. Add optional sides like crackers or sliced cucumbers.
  6. Drizzle balsamic glaze and olive oil just before eating to keep ingredients fresh and avoid sogginess. If packing ahead, store glaze separately.

Notes

Assemble skewers close to mealtime to keep basil fresh and mozzarella from releasing moisture. Keep balsamic glaze separate until ready to eat to avoid sogginess. Room temperature mozzarella absorbs flavors better. For dairy-free option, substitute mozzarella with marinated tofu cubes. Skewers can be prepared ahead and stored covered in the fridge for up to 24 hours, but add glaze just before eating.
