A quick and elegant salad featuring honey-glazed roasted peaches, creamy burrata, and crunchy candied pecans, perfect for entertaining or a light summer meal.

  • 4 ripe but firm peaches, halved and pitted
  • 3 tablespoons raw or wildflower honey
  • 8 ounces fresh burrata cheese, drained and torn into bite-sized pieces
  • 4 cups baby arugula and spinach blend
  • 1 cup pecan halves, toasted and candied with brown sugar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Optional: fresh basil leaves or mint for garnish
  • 2 tablespoons brown sugar (for candied pecans)
  • 1 tablespoon water (for candied pecans)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Halve and pit the peaches. Place them cut-side up on the baking sheet. Drizzle each half with honey and spread gently to coat evenly.
  3. Roast the peaches in the oven for 15-20 minutes until softened and caramelized, watching carefully after 15 minutes to avoid burning.
  4. While peaches roast, heat pecan halves in a dry skillet over medium heat for 2-3 minutes, stirring frequently.
  5. Add brown sugar and water to the pecans. Stir constantly until sugar melts and coats the pecans, about 2 more minutes. Spread on parchment to cool and harden.
  6. In a large bowl, toss baby arugula and spinach with olive oil, lemon juice, salt, and pepper.
  7. Arrange the roasted peaches over the greens. Tear burrata into pieces and scatter on top.
  8. Sprinkle candied pecans generously over the salad.
  9. Optional: garnish with fresh basil or mint leaves.
  10. Drizzle any leftover honey from the roasting pan over the salad for extra sweetness and serve immediately.

Notes

If peaches are overly ripe, reduce roasting time to prevent mushiness. Tear burrata gently by hand to keep creamy texture. Make candied pecans just before serving or store in airtight container and re-toast lightly. A splash of balsamic vinegar can add a tangy kick. For vegan version, substitute burrata with vegan cheese and honey with maple syrup.
