Quick and easy pinwheel sandwiches made with sun butter and strawberry jam, perfect for kid-friendly snacks and allergy-sensitive diets.

Ingredients

Scale
  • 6 tablespoons sun butter
  • 4 tablespoons strawberry jam
  • 4 large flour tortillas (10-inch)
  • 1 tablespoon honey (optional)
  • 1/2 cup fresh strawberries, thinly sliced (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Lay out tortillas on a clean cutting board. Wash and slice fresh strawberries if using.
  2. Spread about 1 1/2 tablespoons of sun butter evenly over each tortilla, leaving a small border around the edges. Mix honey into sun butter before spreading if desired.
  3. Spoon about 1 tablespoon of strawberry jam on top of the sun butter layer and spread gently, leaving a small edge to prevent overflow when rolling.
  4. Scatter thin slices of fresh strawberries and sprinkle chia seeds evenly over the jam if using.
  5. Roll each tortilla tightly into a cylinder.
  6. Using a serrated knife, cut each rolled tortilla into 1-inch thick slices and arrange on a plate with the spiral pattern facing up.
  7. Serve immediately or store in an airtight container in the fridge for up to 24 hours.

Notes

Use room temperature sun butter for easier spreading. Chill rolled tortillas before slicing for cleaner cuts. Avoid overfilling to prevent squishing or leaking. Serrated knife recommended for slicing. Can substitute gluten-free tortillas for gluten-free diet. Variations include peanut butter and grape jam or adding banana slices.
