Instructions

  1. Prepare the Chicken Marinade (10 minutes): In a medium bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper. Add chicken breasts or thighs and coat well. Cover and refrigerate for at least 15 minutes, up to 2 hours if possible.
  2. Make the Tzatziki Sauce (10 minutes): Peel and grate the cucumber finely. Place grated cucumber in a clean kitchen towel or cheesecloth and squeeze out excess moisture.   3. Cook the Chicken (12-15 minutes): Heat a skillet or grill pan over medium-high heat. Add marinated chicken and cook about 6-7 minutes per side until internal temperature reaches 165ยฐF and chicken is browned. Let rest a few minutes before slicing.
  4. Prepare the Bowl Components (5 minutes): Slice fresh cucumber thinly into ribbons or rounds. Halve cherry tomatoes and crumble feta cheese if using. Warm cooked grains.
