Healthy One-Bowl Banana Bread: Easy No-Mixer Recipe

This easy one-bowl banana bread is moist, tender, and made with wholesome ingredients. No mixer needed, it comes together in under 10 minutes and bakes into a perfectly golden loaf with a crackly top.

  • 3 medium ripe bananas (about 1 ½ cups mashed)
  • ⅓ cup (80 ml) melted coconut oil
  • ⅓ cup (80 ml) honey or maple syrup
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups (220 grams) whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup optional mix-ins (dark chocolate chips, chopped walnuts, or dried cranberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides. If you don’t have parchment, grease the pan well with butter or oil.
  2. In a large mixing bowl, mash the bananas with a fork until smooth with a few small lumps (about 1 ½ cups).
  3. Add the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract to the same bowl. Whisk until smooth and well combined.
  4. Sprinkle the whole wheat pastry flour, baking soda, cinnamon, and salt over the wet mixture. Use a spatula or wooden spoon to fold together gently until just combined. Do not overmix.
  5. If using, gently fold in the optional mix-ins (chocolate chips, nuts, etc.) with about 10 folds.
  6. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan on the counter a couple of times to release air bubbles.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be golden brown and cracked.
  8. Cool in the pan for 10 minutes, then lift the bread out using the parchment paper and transfer to a cooling rack. Cool completely before slicing (about 1 hour).

Notes

For best results, use very ripe bananas with black skins. If the bread browns too quickly, tent loosely with aluminum foil for the last 15 minutes of baking. Let cool completely before slicing to avoid a gummy texture.
