These homemade elderberry gummies are soft, tart-sweet, and packed with immune-supporting antioxidants. Made with simple, wholesome ingredients, they’re a kid-approved treat that helps keep your family healthy during cold season.

  • 1 cup 100% apple juice or white grape juice
  • ½ cup honey
  • 4 tablespoons grass-fed gelatin powder
  • 2 tablespoons fresh lemon juice
  • Optional: ¼ teaspoon ground ginger or 1 teaspoon fresh grated ginger
  • Optional: 500 mg vitamin C powder

Instructions

  1. Bloom the gelatin: Pour ½ cup of the apple juice into a small bowl. Sprinkle the 4 tablespoons of gelatin powder evenly over the surface. Let it sit for 5–10 minutes without stirring until it forms a thick, jiggly mass.
  2. Heat the remaining liquid: In a small saucepan, combine the remaining ½ cup apple juice, elderberry concentrate, honey, and lemon juice. Warm over medium-low heat, stirring gently, until the honey dissolves and the mixture is warm but not hot (about 120°F), about 2–3 minutes.
  3. Combine the mixtures: Remove the saucepan from heat. Add the bloomed gelatin to the warm juice mixture. Whisk gently but thoroughly until the gelatin is completely dissolved, about 2 minutes. If adding ginger or vitamin C powder, stir them in now.
  4. Strain the mixture: Pour the liquid through a fine-mesh strainer into a liquid measuring cup with a spout to catch any undissolved gelatin bits or foam.
  5. Fill the molds: Place silicone molds on a baking sheet. Use the measuring cup’s spout to carefully fill each cavity. Work quickly as the mixture will start to set as it cools.
  6. Refrigerate to set: Transfer the baking sheet to the refrigerator. Let the gummies set for at least 4 hours, preferably overnight.
  7. Remove from molds: Gently flex the silicone molds to release the gummies. If any stick, place the mold in the freezer for 5 minutes. Store in an airtight container in the refrigerator.

Notes

Temperature is key: keep juice mixture warm but not above 140°F to preserve elderberry benefits. Don’t skip the blooming step. Work quickly once gelatin is added. Strain to avoid foam. In humid climates, dust gummies with arrowroot powder to prevent sweating. Gummies improve in flavor after a day in the fridge.
