Instructions

  1. Prepare the garlic: Separate the heads into individual cloves. Place the flat side of a chef’s knife on a clove and gently smack it to loosen the skin, then peel. If any cloves have a green sprout in the center, slice the clove in half lengthwise and remove the sprout.
  2. Pack the jar: Place the peeled garlic cloves into a clean glass jar, filling it about three-quarters full. Pack them snugly but leave room for honey to flow between them.
  3. Pour the honey: Slowly pour the raw honey over the garlic cloves, filling the jar to the very top. Use a butter knife or chopstick to gently release any trapped air bubbles. Ensure the garlic is completely covered.
  4. Seal and swirl: Screw the lid on tightly, then gently swirl the jar to distribute the honey. Do not shake vigorously.
  5. Begin fermentation: Place the jar on your kitchen counter, away from direct sunlight. For the first few days, the garlic may float and tiny bubbles will form.
  6. Burp the jar daily for the first week: Unscrew the lid slightly each day to release built-up gas, then tighten again. This prevents pressure buildup.
  7. Flip the jar every few days: Gently flip the jar upside down for a few hours, then flip back. Do this every 2-3 days for the first two weeks to keep garlic coated.
  8. Taste and wait: After two weeks, start tasting. For best flavor, let ferment for a full month. The honey will darken and develop complex depth.
  9. Store and enjoy: Once happy with the flavor, move the jar to the refrigerator or a cool, dark pantry. The fermentation slows in the fridge; the tonic will keep for months.

Notes

Use raw, unfiltered honey for proper fermentation. Avoid metal lids if possible; use plastic or glass lids, or place parchment paper between metal lid and jar. Burp the jar daily for the first week to prevent explosion. If mold appears, discard the entire batch. Patience is key—flavor improves with time.
