Instructions

  1. In a large bowl, cream together the softened unsalted butter and creamy peanut butter using an electric mixer or wooden spoon until smooth and fluffy. Add the vanilla extract and salt, mixing to combine. Gradually add the sifted powdered sugar, stirring until the mixture is thick enough to hold its shape but still pliable.
  2. Scoop out about 1 tablespoon (15 grams) of the peanut butter mixture at a time. Roll each portion between your palms into an oval football shape about 1.5 inches (4 cm) long. Place the shaped truffles on a baking sheet lined with parchment paper. Refrigerate for 30 minutes to firm up.
  3. Using a double boiler or microwave, melt the semisweet chocolate chips with the shortening or coconut oil. Stir until smooth and glossy. Keep the chocolate warm but not hot.
  4. Using a fork or dipping tool, carefully dip each peanut butter football into the chocolate, letting excess drip off before placing it back on the parchment-lined baking sheet. Return dipped truffles to the refrigerator for at least 1 hour to set fully.
  5. Melt the white chocolate chips or candy melts in a microwave-safe bowl, heating in short bursts and stirring until smooth. Transfer to a piping bag or small plastic bag with the tip snipped off. Pipe thin horizontal lines across the center of each truffle and then a few short vertical dashes to mimic football laces. Chill for 15 minutes until the laces harden.
