These light and crispy Halloween popcorn balls come together in under 15 minutes with simple pantry ingredients. Perfect for last-minute parties, they’re a crowd-pleasing treat that looks spooky and festive without the stress.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/2 cup unpopped kernels, or 1 bag plain microwave popcorn)
  • 4 tablespoons unsalted butter
  • 1 package (10 oz) mini marshmallows
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Halloween sprinkles or candy eyes (optional)
  • Non-stick cooking spray

Instructions

  1. Pop the popcorn. If using kernels, pop them in an air popper or on the stovetop with a tablespoon of coconut oil. You should end up with about 8 cups of popped popcorn. Remove any unpopped kernels. Set the popcorn aside in a very large bowl.
  2. Prep your workspace. Line a baking sheet or large cutting board with parchment paper. Spray it lightly with non-stick cooking spray.
  3. Melt the butter. In a large saucepan over medium heat, melt the 4 tablespoons of butter. Let it foam slightly but don’t let it brown, about 2 minutes.
  4. Add the marshmallows. Pour the entire bag of mini marshmallows into the melted butter. Stir constantly until the marshmallows are completely melted and the mixture is smooth, about 3-4 minutes.
  5. Season the mixture. Remove the pan from heat and stir in the vanilla extract and salt until well combined. The mixture should be glossy and smooth.
  6. Combine with popcorn. Pour the marshmallow mixture over the popcorn in the big bowl. Use a spatula to gently fold everything together until every kernel is coated.
  7. Grease your hands. Spray your hands generously with non-stick cooking spray.
  8. Shape the balls. Grab a handful of the popcorn mixture and gently press it into a ball shape about 3 inches in diameter. Place each ball on the prepared parchment paper.
  9. Add decorations. While the balls are still warm and slightly tacky, press on candy eyes or sprinkle on Halloween decorations.
  10. Let them set. Allow the popcorn balls to cool completely at room temperature, about 15-20 minutes.

Notes

Work quickly once the marshmallow mixture is ready as it starts setting within minutes. If the mixture gets stiff before you’re done shaping, return the pan to low heat for 30 seconds to loosen it. Humidity can affect the texture, so try to make these on a dry day. For best results, use fresh popcorn and the same brand of marshmallows each time.
