A lighter version of classic Buffalo chicken dip that uses cottage cheese and Greek yogurt to cut fat without sacrificing flavor. Perfect for game days, potlucks, or a comforting snack.

Ingredients

Scale
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup low-fat cottage cheese (small-curd)
  • 1/2 cup plain Greek yogurt (2% or full-fat)
  • 4 ounces light cream cheese, softened
  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 1 tablespoon ranch seasoning mix
  • 1/2 cup shredded cheddar cheese (sharp cheddar preferred)
  • 1/4 cup blue cheese crumbles (optional)
  • 23 green onions, sliced thin (for garnish)
  • Celery sticks, carrot sticks, or whole-grain crackers for serving

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.
  2. Blend cottage cheese in a blender or food processor until completely smooth (about 30 seconds).
  3. In a mixing bowl, combine blended cottage cheese, Greek yogurt, and softened cream cheese. Stir until smooth.
  4. Add hot sauce and ranch seasoning mix. Stir well. Adjust heat to taste.
  5. Fold in shredded chicken and shredded cheddar cheese until evenly distributed.
  6. Transfer mixture to the prepared baking dish and spread into an even layer. Sprinkle blue cheese crumbles on top if using.
  7. Bake for 20-25 minutes, until bubbling around the edges and lightly golden on top. For a browner top, broil for the last 2 minutes.
  8. Let rest for 5 minutes before serving. Garnish with sliced green onions.
  9. Serve warm with celery sticks, carrot sticks, or whole-grain crackers.

Notes

Don’t skip blending the cottage cheese—it ensures a creamy texture. Use room-temperature ingredients for smooth mixing. Adjust hot sauce to your preferred spice level. The dip can be assembled ahead and refrigerated; add 5-10 minutes to baking time if starting cold. For a slow cooker version, combine all ingredients and cook on low for 2 hours.
