A comforting, lighter take on classic lasagna in soup form, made easy in the slow cooker with a creamy cottage cheese trick. Perfect for busy weeknights and sure to please a crowd.

  • 1 pound lean ground turkey (93/7)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce, no salt added
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 lasagna noodles, broken into 2-inch pieces
  • 1 cup low-fat cottage cheese (small curd)
  • ½ cup grated Parmesan cheese (freshly grated)
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 cup shredded part-skim mozzarella cheese
  • ¼ cup fresh basil, chiffonade (for garnish)

Instructions

  1. Brown the turkey: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until no longer pink (6-8 minutes). Add diced onion and cook 2 minutes until softened, then stir in minced garlic for 30 seconds until fragrant.
  2. Transfer to slow cooker: Dump the browned turkey mixture into a 6-quart slow cooker. Add crushed tomatoes, tomato sauce, tomato paste, chicken broth, oregano, basil, red pepper flakes, salt, and pepper. Stir well.
  3. Cook on low for 4-6 hours or high for 2-3 hours until flavors meld.
  4. Add noodles: About 20 minutes before serving, stir in broken lasagna noodles, ensuring they are submerged. Cover and cook on high for 15-20 minutes until tender but al dente.
  5. Make cottage cheese mixture: In a small bowl, mix cottage cheese, Parmesan, egg, and parsley until well combined.
  6. Finish soup: Turn off slow cooker. Drop spoonfuls of cottage cheese mixture over the soup. Let sit 1 minute, then gently fold into the soup until creamy.
  7. Serve: Ladle into bowls. Top each with shredded mozzarella and fresh basil. Serve immediately.

Notes

Don’t add noodles too early or they’ll become mushy. Brown the meat well for deep flavor. Use low-sodium broth to control salt. For ultra-smooth texture, blend cottage cheese before mixing. Let soup rest 5 minutes before serving after adding cheese mixture. Freeze soup base without noodles for up to 3 months.
