Ingredients

  • Milk, 1 cup (240ml)

  • Peanut butter, 1/4 cup (65g)
  • Ripe banana, 1 medium, mashed
  • Honey or maple syrup, 1-2 tablespoons (15-30ml)
  • Chia seeds, 1 tablespoon (15g) (optional)
  • Vanilla extract, 1 teaspoon (5ml)
  • Sliced banana, 1/2 medium (for topping, optional)
  • Drizzle of peanut butter, 1 tablespoon (15g) (for topping, optional)
  • A sprinkle of cinnamon or cocoa nibs (for topping, optional)

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth.
  2. In a medium mixing bowl, whisk together the mashed banana, milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until smooth and well combined.
  3. Add the rolled oats and chia seeds (if using) and stir with a spatula until all oats are coated. The mixture will be soupy.
  4. Divide the mixture evenly among four 8-ounce mason jars or airtight containers, leaving about half an inch of space at the top.
  5. Seal the jars and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats, then top with sliced banana, a drizzle of peanut butter, and a sprinkle of cinnamon or cocoa nibs if desired. Serve cold or microwave for 30-45 seconds for warm oats.
