Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a rimmed baking sheet with parchment paper. Wash the delicata squash thoroughly.
  2. Slice off both ends of each squash (about ยผ inch from each tip). Cut the squash crosswise into ยฝ-inch thick rings. Use a spoon or your fingers to scoop out the seeds and stringy pulp from the center of each ring.
  3. In a small bowl, whisk together the melted butter, maple syrup, cinnamon, vanilla extract (if using), and salt.
