  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325ยฐF (163ยฐC). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on two opposite sides. Lightly spray the parchment with non-stick cooking spray.
  2. In a medium bowl, combine 1 ยฝ cups graham cracker crumbs, 2 tablespoons granulated sugar, and a pinch of salt. Pour in 6 tablespoons melted unsalted butter and stir with a fork until the mixture looks like wet sand. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.
  3. While the crust bakes, peel, core, and slice the Honeycrisp apples into ยผ-inch thick slices. In a small bowl, toss the apple slices with 3 tablespoons packed brown sugar, 1 teaspoon ground cinnamon, and 1 tablespoon lemon juice. Spread them out on a plate or small baking sheet in a single layer and let them sit while you make the filling.
  4. In a large mixing bowl, beat 16 ounces of softened cream cheese with an electric hand mixer on medium speed until smooth and creamy, about 2 minutes. Scrape down the sides and bottom of the bowl. Add ยฝ cup granulated sugar and ยผ teaspoon salt, and beat for another minute until combined.
