Perfect Sourdough Focaccia Recipe with Caramelized Figs and Sea Salt

A rustic, aromatic sourdough focaccia with a crispy golden crust, topped with sweet caramelized figs and crunchy sea salt crystals. This bread offers a perfect balance of tangy sourdough and sweet-savory flavors, ideal for special occasions or everyday treats.

  • 100g (about ½ cup) active sourdough starter
  • 400g (about 3 ¼ cups) all-purpose flour
  • 320ml (1 ⅓ cups) lukewarm water
  • 60ml (¼ cup) olive oil, plus extra for drizzling and greasing
  • 10g (2 tsp) fine sea salt
  • 810 medium fresh figs, halved
  • Coarse sea salt for sprinkling on top
  • 1 tbsp brown sugar or honey (optional, for caramelizing figs)

Instructions

  1. Activate the starter by feeding your sourdough starter about 4-6 hours before baking so it’s bubbly and active.
  2. In a large bowl, combine flour and fine sea salt. Add lukewarm water and active starter. Stir until just combined; dough will be shaggy and sticky.
  3. Cover bowl and let dough rest at room temperature for 3-4 hours for the first rise, folding dough over itself 3-4 times every hour.
  4. While dough rises, halve figs and caramelize in a small pan over medium heat with brown sugar (or honey) and a splash of olive oil for 5-7 minutes until soft and sticky. Set aside to cool.
  5. Oil a baking sheet generously. Transfer dough and gently stretch to fill the pan. Let rest 10 minutes if resistant, then stretch again. Cover and proof for 45 minutes to 1 hour.
  6. Dimple dough surface with fingertips, drizzle with olive oil, arrange caramelized figs on top pressing lightly, and sprinkle coarse sea salt.
  7. Preheat oven to 450°F (230°C). Bake focaccia for 20-25 minutes until golden brown and crisp on edges.
  8. Remove from oven, brush with more olive oil while warm, and let cool slightly before slicing.

Notes

Use lukewarm water (~75°F/24°C) to avoid killing yeast. Stretch and fold dough every hour during first rise for best texture. Caramelize figs low and slow to avoid bitterness. Tent with foil if edges brown too quickly. For softer crust, cover focaccia with a kitchen towel while cooling. Can substitute pears or peaches for figs. Gluten-free flour blends can be used but texture will differ. Honey can be swapped with maple syrup for vegan option.
