  • 1 cup shredded carrots
  • 1 cup snap peas or green beans
  • 1/2 cup thinly sliced bell peppers
  • 1 cup cooked chicken, tofu cubes, or shrimp (optional)
  • 1/4 cup creamy peanut butter (natural unsweetened preferred)
  • 1 tablespoon toasted sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • Pinch of chili flakes (optional)
  • 2 green onions, thinly sliced for garnish
  • 1 teaspoon toasted sesame seeds for garnish

Instructions

  1. Bring a medium pot of water to a boil. Add the ramen noodles and cook for 2-3 minutes until just tender (al dente). Drain and rinse under cold water to stop cooking. Set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, toasted sesame oil, rice vinegar, honey, minced garlic, grated ginger, and chili flakes if using. Add 2-3 tablespoons warm water to thin the sauce to a smooth, pourable consistency. Taste and adjust seasoning if needed.
  3. Heat a large skillet or wok over medium-high heat. Add a splash of oil (vegetable or canola). Toss in the carrots, snap peas, and bell peppers. Stir fry for 3-4 minutes until veggies are bright and crisp-tender. Add cooked protein now to warm through.
  4. Lower heat to medium. Add the drained noodles to the skillet and pour the creamy sesame peanut sauce over everything. Toss gently but thoroughly to coat noodles and veggies evenly. Cook for another 2 minutes, letting the sauce cling and slightly thicken.
  5. Remove from heat. Sprinkle with sliced green onions and toasted sesame seeds. Give one last toss and serve immediately.

Notes

Warm peanut butter slightly if too thick before mixing sauce. Rinse noodles after boiling to prevent clumping. Toss noodles gently to avoid breaking. Prep sauce ingredients while noodles cook to save time. Add chopped peanuts or roasted cashews for extra crunch. For gluten-free, use tamari and gluten-free noodles. Sauce can be made ahead and stored in fridge.
