A simple, no-cook grazing board perfect for date night or a lazy evening. With a mix of cheeses, cured meats, fruit, nuts, and crackers, it’s an effortless and satisfying meal for two.

Ingredients

Scale
  • 46 ounces cheeses (choose 23 varieties: brie, aged gouda, sharp cheddar, blue cheese, goat cheese)
  • 46 ounces cured meats (choose 1-2: salami, prosciutto, soppressata, pepperoni)
  • 1 cup fresh fruit (grapes, apple slices, pear slices, fresh figs)
  • 1/4 cup dried fruit (dried apricots, figs, dates, cranberries)
  • 1/4 cup nuts (almonds, walnuts, pecans, pistachios)
  • 46 ounces crackers and bread (water crackers, crostini, sesame crackers, sliced baguette)
  • 23 tablespoons spreads and dips (honey, fig jam, whole grain mustard, olive tapenade)
  • 1/4 cup pickles and olives (optional: cornichons, pickled onions, kalamata olives, castelvetrano olives)
  • Fresh herbs for garnish (optional: rosemary, thyme, edible flowers)

Instructions

  1. Start with the bowls: Place small bowls on the board in a rough triangle or scattered pattern. Fill with spreads (honey, jam, mustard) and wet ingredients (olives, pickles).
  2. Add the cheeses: Space cheeses around the board. Leave soft cheese whole or cut into wedges. For hard cheese, slice a few pieces and arrange in a pile, leaving the rest of the wedge on the board.
  3. Add the meats: Fold or roll sliced meats and place near cheeses. Drape prosciutto in loose ribbons; fold salami into quarters or roll into cylinders.
  4. Fill in with fruit and nuts: Scatter fresh and dried fruit around the board, filling gaps. Place clusters of grapes and piles of nuts in different spots.
  5. Add crackers and bread: Arrange crackers and bread slices in small stacks or fan them out in empty spaces, distributing evenly so both people can reach.
  6. Garnish and finish: Tuck fresh herbs around the board. Drizzle honey over brie or hard cheese. Ensure the board looks abundant but not crowded.

Notes

Take cheese out of fridge 20-30 minutes before serving for best flavor. Slice apples and pears at the last minute and toss with lemon juice to prevent browning. Don’t overcrowd the board; leave breathing room. Keep a small plate and napkin for each person. For a vegetarian version, skip meat and double up on cheese. For a nut-free option, use roasted chickpeas or pumpkin seeds.
