Instructions

  1. Prep the slaw: In a large bowl, combine shredded cabbage, carrot, diced red onion, julienned mango, minced habanero, and chopped cilantro. Toss gently to mix.
  2. Make the slaw dressing: In a small bowl, whisk together apple cider vinegar, honey, and a pinch of salt. Pour over the slaw mixture and toss until evenly coated. Set aside for 10-15 minutes.
  3. Prepare the shrimp: Pat shrimp dry with paper towels. Season lightly with salt and pepper.
  4. Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Add butter and minced garlic, stirring for about 30 seconds until fragrant but not browned.
  5. Add shrimp to pan: Place shrimp in a single layer. Cook 2-3 minutes per side until pink and opaque, spooning garlic butter over shrimp as they cook.
  6. Finish with lime: Remove shrimp from heat and squeeze fresh lime juice over them. Toss gently to coat.
  7. Warm tortillas: While shrimp cooks, warm tortillas in a dry skillet for about 30 seconds per side or wrap in foil and heat in a 350ยฐF oven for 5-7 minutes.
  8. Assemble tacos: Place a few shrimp on each tortilla, top generously with mango habanero slaw, and garnish with extra lime wedges or cilantro if desired.
