Instructions

  1. In a mixing bowl, combine shredded cooked chicken, softened cream cheese, buffalo sauce, and shredded cheddar cheese. Stir gently until evenly coated and creamy but still textured.
  2. Warm each tortilla briefly in a dry skillet over medium-low heat for 2-3 minutes or microwave for 15 seconds wrapped in a damp paper towel to soften.
  3. Lay one tortilla flat and spread about one-third of the buffalo chicken mixture evenly over it, leaving a small border around the edges.
  4. Roll the tortilla tightly but gently from one side to the other, keeping the filling inside.
  5. Using a sharp serrated knife, cut the rolled tortilla into 1-inch thick slices. If the roll feels loose, wrap it in plastic wrap and chill for 10 minutes before slicing.
  6. Arrange the pinwheels on a platter immediately or refrigerate for up to 2 hours to allow flavors to meld and rolls to firm up.
