  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 cups cooked white rice, chilled (day-old rice preferred)
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 green onions, thinly sliced (white and green parts separated)
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame seeds
  • Optional toppings: fresh cilantro leaves, julienned carrots or cucumber, fried egg (sunny side up)

Instructions

  1. Prepare the rice: Use leftover rice chilled overnight or cook 1 cup (190 g) white rice according to package instructions and cool spread on a baking sheet.
  2. Cook the ground beef: Heat a large skillet over medium-high heat. Add ground beef and break apart with a wooden spoon. Cook until browned but not fully cooked, about 4-5 minutes.
  3. Add aromatics & sauce: Stir in minced garlic and cook 30 seconds until fragrant. Add soy sauce, brown sugar, sesame oil, black pepper, and red pepper flakes if using. Cook, stirring often, until sauce thickens and coats beef, about 3-4 minutes.
  4. Make the sesame fried rice: In a separate skillet, heat vegetable oil over medium heat. Add white parts of green onions and minced garlic; sauté 1 minute until fragrant.
  5. Add chilled rice, breaking up clumps. Drizzle sesame oil and soy sauce over rice. Stir-fry, pressing and turning occasionally to get crispy edges, about 5-6 minutes.
  6. Assemble bowls: Spoon sesame fried rice into bowls. Top with Korean BBQ ground beef. Garnish with green parts of scallions, toasted sesame seeds, and optional toppings like cilantro, carrots, or fried egg.
  7. Serve immediately for best texture and flavor.

Notes

Use day-old chilled rice for best fried rice texture. If sauce thickens too quickly or burns, lower heat and add a splash of water. Drain excess fat from beef after browning to avoid greasy bowl. Multitask by frying rice while beef simmers. For gluten-free, substitute tamari for soy sauce. For plant-based, use crumbled tofu or tempeh marinated in sauce.
