A moist, tender, and chocolatey sweet bread made with ripe bananas and shredded zucchini, perfect for a comforting breakfast or snack. This easy one-bowl recipe requires no mixer and minimal cleanup.

  • 1 cup shredded zucchini, squeezed dry
  • 2 cups all-purpose flour (240 grams)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¾ cup granulated sugar (150 grams)
  • ⅓ cup vegetable oil (80 ml)
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 1 cup semi-sweet or dark chocolate chips (170 grams)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Shred 1 cup of zucchini using a box grater or food processor. Press the shredded zucchini between paper towels or a clean kitchen cloth to remove excess moisture.
  3. In a large mixing bowl, mash 3 ripe bananas with a fork until mostly smooth but with a few lumps remaining.
  4. Stir in ⅓ cup vegetable oil, 2 large eggs, and 1 teaspoon vanilla extract to the mashed bananas. Mix until combined but do not overbeat.
  5. Add 2 cups all-purpose flour, ¾ cup sugar, 1 teaspoon baking soda, ½ teaspoon baking powder, ½ teaspoon salt, and 1 teaspoon cinnamon to the bowl. Stir gently to combine all dry ingredients evenly.
  6. Gently fold in the shredded zucchini and 1 cup chocolate chips until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick in the center. It should come out mostly clean with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Squeeze zucchini dry to avoid soggy bread. Mix gently to prevent dense texture. Toss chocolate chips in a teaspoon of flour before folding to prevent sinking. Batter can be refrigerated for a few hours before baking; bring to room temperature before baking. If bread is not cooked through, tent with foil and bake an additional 5-10 minutes.
