  • 2 cans (15 oz each) cannellini or Great Northern white beans, drained and rinsed
  • 1 can (4 oz) diced Hatch green chiles, mild to medium heat
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • A handful chopped cilantro (optional)
  • Optional toppings: crumbled queso fresco, sliced avocado, or sour cream

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add chopped onion and cook until softened and translucent, about 5-7 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
  2. Place chicken breasts or thighs at the bottom of the slow cooker. Pour the sautรฉed onion and garlic mixture over the chicken.
  3. Add the drained and rinsed white beans and diced Hatch green chiles to the slow cooker.
  4. Sprinkle ground cumin, smoked paprika, dried oregano, salt, and pepper over the mixture. Pour in 4 cups low-sodium chicken broth to cover.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender and easily shredded.
  6. Remove chicken and shred with two forks. Return shredded chicken to the slow cooker and stir to combine.
  7. Optional: Use an immersion blender to puree about 1 cup of the soup (including beans and broth) in the slow cooker for a creamy texture. Alternatively, blend in a regular blender and mix back in.
  8. Stir in juice of 1 lime. Taste and adjust salt and pepper as needed.
  9. Ladle soup into bowls and garnish with chopped cilantro, sliced avocado, or crumbled queso fresco.

Notes
