Ingredients

Scale
  • 8 oz sharp cheddar cheese, cut into 1-inch cubes
  • 8 oz gouda cheese, sliced into triangles
  • 4 oz brie cheese, whole or cut into wedges
  • 6 oz prosciutto, rolled into roses
  • 6 oz salami, folded into triangles or stacked
  • 2 cups pretzel sticks
  • 1 cup black olives, drained
  • 1/2 cup pickles or cornichons
  • 4 oz provolone or mozzarella slices, cut into ghost shapes with a cookie cutter
  • 1 cup orange bell pepper strips
  • 1 cup blackberries
  • 1/2 cup dried apricots
  • 1/4 cup candy eyeballs (optional)
  • 1 cup candy corn (preferably Brach’s)
  • 1 cup chocolate-covered pretzels
  • 1/2 cup pumpkin-shaped gummies
  • 1 cup red or purple grapes
  • 1 cup pumpkin hummus (store-bought or homemade, tinted orange with paprika if desired)
  • Honey or hot honey, for drizzling
  • 2 cups assorted crackers (pumpkin-shaped, bat-shaped, or plain water crackers)

Instructions

  1. Prep your ingredients (10 minutes before assembly): Let cheeses come to room temperature (about 20 minutes out of the fridge). Wash and dry grapes and bell pepper strips. Drain olives and pickles. Open bags of pretzels, candy corn, and chocolate-covered pretzels. Cube cheddar into 1-inch pieces, slice gouda into thin triangles, and leave brie whole or cut into wedges.
  2. Make the prosciutto roses (5 minutes): Fold each slice of prosciutto in half lengthwise. Starting at one end, roll it up tightly like a rosebud, tucking outer edges slightly to create petals. Make about 6 to 8 roses and place on a small plate or directly on the board.
  3. Create the ghost cheese (3 minutes): Lay provolone or mozzarella slices on a cutting board. Press a ghost-shaped cookie cutter firmly into the cheese and wiggle gently to release. You should get about 2 ghosts per slice. If cheese sticks, dip cutter in water between cuts. Place ghosts on a small plate or directly on the board.
  4. Arrange the bowls first (2 minutes): Place small bowls on the board—one in the center for pumpkin hummus, one on the left for olives, one on the right for candy corn, and one in a corner for honey. Ensure bowls are stable.
  5. Add the large items (3 minutes): Place cheese cubes, brie wedge, and gouda slices around the bowls in clusters—cheddar in one area, gouda in another, brie near the honey. Leave space between clusters.
  6. Layer in the meats and crackers (3 minutes): Place prosciutto roses near the brie. Fold salami into triangles and stack near the cheddar. Arrange crackers in small piles or fan them out in arcs—pumpkin-shaped near hummus, plain near cheese.
  7. Fill in the gaps with snacks (4 minutes): Place pretzel sticks in small bundles or scatter like fallen branches. Add chocolate-covered pretzels near candy corn. Tuck blackberries and grapes into remaining gaps. Sprinkle pumpkin gummies around. Place candy corn in its bowl and scatter a few pieces around the board.
  8. Add the finishing touches (2 minutes): Drizzle honey over brie or gouda. Place edible eyes on hummus or near ghost cheese. Tuck fresh herbs like rosemary or thyme around the board for color. Step back and admire.
  9. Serve immediately or refrigerate: If serving within an hour, leave at room temperature. If prepping ahead, cover loosely with plastic wrap and refrigerate. Pull out 20 minutes before serving to soften cheese.

Notes

Let cheeses come to room temperature for best flavor. Don’t overcrowd the board; keep extra ingredients in the kitchen for refills. For a kid-friendly version, swap prosciutto and salami for turkey roll-ups and string cheese. For a gluten-free option, use gluten-free crackers and pretzels. Candy corn is the star—keep it as a non-negotiable ingredient.
