  • 4 cups raw apple cider vinegar (with the mother)
  • 4 ounces fresh ginger root, unpeeled, roughly chopped
  • 3 ounces fresh turmeric root, unpeeled, roughly chopped
  • 2 ounces fresh horseradish root, peeled and grated
  • 1 medium onion, roughly chopped
  • 1 whole head garlic, cloves separated and smashed
  • 2 to 3 fresh jalapeรฑos, sliced (seeds optional)
  • 1 medium lemon, sliced into rounds
  • 1 medium orange, sliced into rounds
  • 2 to 3 fresh rosemary sprigs
  • 4 to 5 fresh thyme sprigs
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon cayenne pepper (or 2 dried chiles)
  • ยผ to ยฝ cup raw honey (to taste, added after straining)

Instructions

  1. Wash all produce thoroughly. Roughly chop the ginger, turmeric, onion, and horseradish. Smash and peel the garlic cloves. Slice the lemon, orange, and jalapeรฑos into thin rounds.
  2. Layer ingredients in a half-gallon glass jar: start with the hard roots (ginger, turmeric, horseradish) at the bottom, then add onion, garlic, jalapeรฑos, citrus slices, herb sprigs, peppercorns, and cayenne. Pack tightly.
  3. Slowly pour apple cider vinegar over the ingredients until everything is completely submerged by about an inch. Press down with a spoon to release air bubbles.
  4. Seal the jar tightly and shake well. Label with the date.
  5. Store in a cool, dark place (like a kitchen cabinet) for 2 to 4 weeks. Shake the jar every day or two.
  6. Start tasting after 2 weeks. When the flavor is to your liking, proceed to straining.
  7. Line a fine-mesh strainer with cheesecloth and set over a large bowl. Pour the entire contents through the strainer. Let drip, then gather cheesecloth and squeeze out all liquid.
  8. Stir in raw honey, starting with ยผ cup and adding more to taste (usually about โ…“ cup).
  9. Using a funnel, pour the finished fire cider into clean bottles or jars, leaving a little headspace. Seal and refrigerate.

Notes

Grate horseradish fresh to release its volatile oils. Don’t skip black pepperโ€”it increases curcumin absorption from turmeric. Refrigerate after straining to keep flavors bright. If mold appears during infusion, scoop it off immediately and ensure all solids are submerged. Leftover solids can be dehydrated and ground into a seasoning powder. For a milder version, reduce horseradish to 1 ounce, skip jalapeรฑos, and use ยฝ teaspoon cayenne. For a sweet honey ginger version, double the ginger and increase honey to ยฝ cup. For a winter citrus twist, use blood oranges and Meyer lemons. To freeze, pour into ice cube trays for single-serving doses.
