  • 12 mini peanut butter cups (one per cookie, e.g., mini Reeseโ€™s)
  • 4 tablespoons (56g) unsalted butter, softened
  • Pinch of salt

Instructions

  1. Line a baking sheet or tray with parchment paper.
  2. In a large mixing bowl, combine rolled oats, cocoa powder, and a pinch of salt; stir gently to blend.
  3. In a medium saucepan over low heat, melt peanut butter, butter, and honey or maple syrup together, stirring constantly until smooth (about 5 minutes).
  4. Remove from heat and stir in vanilla extract.
  5. Pour the melted mixture over the oat-cocoa mix and fold together until oats are fully coated and batter is glossy and thick. If too runny, heat gently for another minute while stirring.
  6. Using a small cookie scoop or spoon, drop spoonfuls of the mixture onto the parchment paper.
  7. Quickly press a mini peanut butter cup onto the top center of each mound to form the witch hat shape.
  8. Place the tray in the refrigerator for at least 30 minutes to firm up before serving.
